Try James Martin's creative way with leeks - softened with shallots and thyme, and baked with cream and grated cheddar

Method

1. Melt the butter in a pan and gently fry the leeks, shallots and thyme for 5-10 minutes until softened. Pour in the white wine and leave to bubble away for 5 minutes.

2. Add the double cream, season and simmer gently for 5-6 minutes. Transfer to an ovenproof dish and leave to cool.

3. Preheat the oven to 180C/gas 4.

4. Cover the dish with the grated cheese and bake in the oven for 20-30 minutes. Serve hot.

Could be really nice, but I suggest using it as a stock for a pasta bake. I would definitevely reduce amount of cheese and pour a little bit more of cream. Bake with Pasta! It's an interesting idea, but a lttle not enough and too greasy on its own.

I've just made this dish for the first time, so very easy and fantastic flavours. Substituted rosemary for the thyme. Definately on my favourites list now.

fab dish cooked it last weeek for a family dinner went down a storm, doing it again tonite to go with a sausage plait yum yum!

I tried this tonight when cooking a meal for my in laws. It went down a storm and is so easy to do. Will def be a favourite from now on!

I tried this recipe and served it with haddock steamed with butter with new potatoes! It was absolutely brilliant and we have it often with other dishes.
