Barry Topp from New Forest Cider prepares an unusual but delicious mix of dry cider, citrus, ginger and warm spices
 

Hot mulled cider

Method

 
1. Mix together the cider, spices (wrapped in a piece of muslin), fruit and ginger in a heavy-based saucepan. Heat gently and simmer for 15 minutes.

2. Add the sugar and stir until dissolved.

3. Strain the cider and serve in glasses garnished with slices of apple.

Ingredients

1.7 litres dry still cider
18g packet coarsely ground cider spices, (cinnamon, nutmeg, allspice and cloves)
1 orange, sliced
1/2 lemon, sliced
2 cm piece Ginger, chopped
6 tsp demerara sugar
sliced apple, to serve
