Tana Ramsay's rock cakes, flavoured with orange zest and cinnamon, are quick and easy to prepare

- soak the cranberries in a shallow bowl of water to plump them up a little. You could replace the dried cranberries with currants.
Ingredients
- 100g unsalted Butter, softened, plus extra for greasing
- 225g plain flour
- 50 g dried Cranberries
- 2 Oranges, zest only
- 50g brown sugar
- 1 large Egg
- 1 tsp Baking powder
- 1 tsp ground Cinnamon
- 1 tsp Milk
Method
1. Preheat the oven to 180C/gas 4. Lightly grease a baking sheet.2. Put all the ingredients in a large bowl and mix together well. Using your hands, make eight mounds out of the dough.
3. Place the mounds onto the baking sheet and bake for 10-15 minutes until the tops are a light golden brown. Don't allow them to overcook, as they will continue to cook slightly when taken out of the oven.
4. Remove from the oven and cool on a rack.

I needed a recipe for rock cakes to make with year 2 children at school and was very please with this. Rather than soaking the dried fruit in water, I soaked it in the juice of one of the zested oranges. The key is definitely not to over cook them - when baked for only 10 minutes, they were really lovely and moist. The kids love them.
