Method

 
1. Preheat the oven to 180C/gas 4. Lightly grease a baking sheet.

2. Put all the ingredients in a large bowl and mix together well. Using your hands, make eight mounds out of the dough.

3. Place the mounds onto the baking sheet and bake for 10-15 minutes until the tops are a light golden brown. Don't allow them to overcook, as they will continue to cook slightly when taken out of the oven.

4. Remove from the oven and cool on a rack.

Cook's note: soak the cranberries in a shallow bowl of water to plump them up a little. You could replace the dried cranberries with currants.

100g unsalted Butter, softened, plus extra for greasing
225g plain flour
50g dried cranberries
2 oranges, zest only
50g soft brown sugar
1 large egg
1 tsp Baking powder
1 tsp ground cinnamon
1 tsp Milk
