Meringues, cream and brambles come together in Gary Rhodes' Scottish twist on Eton mess

Ingredients

  • 4 meringues, crushed
  • 200ml double cream, whipped until soft peaks form
  • 200g Blackberries
  • 4 tbsp bramble Jam

To serve

  • icing sugar
  • 4 sprigs Mint

Method

1. Layer the meringues, cream, blackberries and jam in four serving glasses.

2. Decorate each glass with a dusting of icing sugar and a sprig of mint. Serve.
