Crisp Bacon Salad

Method

 
1. Dry fry the bacon in a medium frying pan until crisp and golden-brown.

2. For the dressing: whisk together the lime juice, honey and sesame oil in a small bowl.

3. Put the salad leaves in a serving bowl, sprinkle with the spring onions and top with the hot bacon. Season to taste and drizzle over the dressing. Serve at once.

8 rashers streaky back bacon
2 large handfuls green salad leaves
8 Spring onions, sliced

For the dressing

4 limes, juice only
8 tbsp Irish wild Honey
4 tbsp Sesame oil
