Method

1. Place the potatoes in a large pan of boiling salted water and cook until tender - about 15-20 minutes. Add the marrow for the last few minutes of cooking time. Drain and keep warm.

2. Mash with a potato masher or rice until smooth. Season with salt and pepper to taste.

3. Gently fry the onions in the butter until softened, but not coloured.

4. Add the onions to the potatoes and marrow and serve.
