Inspired by The Lord of the Rings, Fergus O'Sullivan soaks warming spices in brandy and apple juice to create a fire-side drink that'll take you through the colder months
 

Spiced shire ale

Method

 
1. Open the cardamom pods and strip out the seeds. Crush the cinnamon stick and put all of the spices in a sealable container with the brandy and apple juice. Leave overnight to allow the brandy to absorb the spicy flavours.

2. Dilute the honey with a little hot water and strain the brandy and apple juice mixture over the honey. Stir to combine.

3. Divide between 4 - 6 tankards, depending on the size. Top up with the ale and serve.

10 cardamom pods
1 cinnamon stick
12 whole Cloves
1 tsp Nutmeg
200ml apple brandy
100ml apple juice
1-2 tbsp clear Honey
2 litres golden ale
