Method

1. Preheat the oven to 170C/gas 3.

2. Put the grated onions in a pan or casserole large enough to hold the shoulder. Put the bay leaves and star anise on top of the onions and the shoulder on top of them. Pour over the water.

3. Cover, put into the oven and cook for 3 hours. Uncover for the last hour. Taste for seasoning.

4. Serve with sliced potatoes cooked in lamb stock and buttered baby kale.
