It's time to give baked beans a makeover with Manju Mahli's simple Indian flourish

Ingredients

  • 2 tbsp vegetable oil
  • 1 Onion, peeled and chopped
  • 1 green chilli, seeds removed and finely chopped
  • 1/4 tsp Garam masala
  • 1/4 tsp ground Cumin
  • 1/4 tsp ground Coriander
  • 1 x 400g can baked beans
  • hot chapattis, naan, pitta or toast, to serve

Method

1. Heat the oil in a small saucepan over a moderate heat and fry the onion for a couple of minutes.

2. Add the chilli and cook for a couple of minutes, stirring continuously, until the onion begins to turn golden brown.

3. Stir in the spices and fry for a further minute, before adding the beans. Reduce the heat and cook for 3 minutes.

4. Taste and season with salt, if necessary. Serve with hot chapattis, naan, pitta bread or toast.

Variations:
You can substitute baked beans for mushy peas.
Stir in a knob of butter after you've added the beans for a creamier texture.
