Tana Ramsay dresses up oats with syrupy, toasted almonds and plump, oven-roasted fruit

Ingredients

  • 25g Butter
  • 4 Peaches, halved, stones removed
  • 25g brown sugar
  • 75 g blanched flaked Almonds
  • 100 g porridge oats
  • 600ml Milk
  • 300 ml water

Method

1. Preheat the oven to 180C/gas 4.

2. Generously butter a small ovenproof dish and arrange the peaches in it, cut side uppermost. Cook in the preheated oven for 7 minutes.

3. Mix together the soft brown sugar and flaked almonds and set aside.

4. Put the oats, milk and water into a medium saucepan and bring to the boil, stirring constantly. Turn down the heat and simmer for about 7 minutes until the porridge is thick and creamy. Keep stirring.

5. Take the peaches out of the oven and sprinkle with the almond and sugar mixture. Return to the oven and cook for a further 10 minutes.

6. Divide the porridge between 4 bowls and arrange 2 peach halves on top of each. Spoon over the syrupy almonds and serve.
