Migas

Method

 
1. Cut the bread into 1 cm cubes. Heat the olive oil in a frying pan over a medium heat and fry the garlic for 1 minute or until golden brown. Add the bacon and cook for 5 minutes before adding the nuts and frying for another 5 minutes, stirring well.

2. Stir in the paprika, coating well, pour in the sherry and immediately add the bread cubes. Cook, stirring constantly, for 10 minutes. Season with salt and pepper, scatter over the parsley and serve.

4 slices of good quality white bread
4 tbsp light olive oil
3 garlic cloves, finely chopped
100g bacon lardons
25g Hazelnuts
25g Almonds
25g Walnuts
1 tsp sweet paprika
50ml dry Oloroso sherry
handful of fresh Parsley, finely chopped
