With a marinade of rum, pineapple juice and Cajun spice, Charita Jones creates seafood soul food to die for

Ingredients

  • 1kg medium to large Prawns, peeled and de-veined
  • 100 ml dark rum, plus a splash
  • 150ml pineapple juice
  • 2 tsp Garlic, finely chopped
  • 1 tbsp chilli sauce, or Tabasco sauce
  • 100g fresh Coriander, chopped
  • 1 tsp Cajun seasoning
  • 1 tbsp soft dark brown sugar

Method

1. Put the prawns, rum, pineapple juice, garlic, chilli sauce, fresh coriander and Cajun seasoning in a bowl and leave to marinate for an hour.

2. Pour the mixture into a frying pan and bring to the boil, gently.

3. Cook until the prawns are firm and pink (just a few minutes).

4. Remove the cooked prawns, add the brown sugar to the juices and simmer until the mixture has reduced and thickened.

5. Add another splash of rum and return the prawns to the pan, tossing them in the drunken juices.

I used this recipe for a starter last Friday, using Jasmin rice as a bed. Only one guest refused it, as she was allergic to prawns. There was not a scrap left on any of seven plates - including mine. It really is delicious.
