Taramasalata

Method

 
1. Soak the bread in water, then squeeze it dry and put into a bowl with the roe and garlic. Beat with an stick blender, adding the oil in a slow steady stream. If you see the mixture beginning to curdle you can add a little hot water to help bring it back.

2. Add the lemon juice and pepper to taste. You can also add water if the mixture seems too thick and rich.

3. To serve: garnish with coriander, olives and olive oil and serve with toasted pitta breads.

1 slice white country bread, crusts removed
225g fresh smoked soft roe, skin removed
1 large garlic clove, crushed
300ml light olive oil
1/2 lemon, juice only

To serve

chopped Coriander
Olive oil
olives
toasted pitta breads
