Charita Jones smothers chunky chops with a sweet and savoury topping that's great matched with mash

Ingredients

  • 2 tbsp vegetable oil
  • 4-6 chunky pork loin chops
  • 2 Onions, sliced
  • 1 green pepper, sliced
  • 250g Mushrooms, sliced
  • 4 large cooking Apples, cored and quartered
  • 2 tbsp brown sugar
  • 1 tsp Soy sauce
  • 1 tsp Cajun seasoning, (eg Momma's - see below)

To serve

  • cabbage with raisins
  • mashed potato

Method

1. Heat the vegetable oil in a large frying pan, add the pork chops and brown on both sides.

2. In another pan, add the onions, pepper, mushrooms, apple, sugar and soy sauce. Saute for 1 minute, then add 2 tablespoons of water. Once this bubbles, transfer the pork chops to the pan and sprinkle the Cajun seasoning on top.

3. Cover the chops with the vegetables and fruit, and put a lid on top. Leave to steam for about 20-30 minutes or until the apples are tender. Do not stir: the pork chops should be smothered in the vegetables and apples.

4. Serve with mashed potatoes and sliced cabbage, pan fried in olive oil with raisins.
