Tana Ramsay cooks rounds of courgettes with garlic, lemon and a crisp coating of parmesan to serve with fish

Method
1. Heat a little olive oil in a frying pan and fry the plaice fillets for about 2 minutes each side, until cooked through.2. In another frying pan, heat a little olive oil and add the courgettes. Cook until slightly browned then add the garlic, lemon juice and zest and stir though. Sprinkle over the parmesan and stir to coat the courgettes. Fry until the parmesan crust crisps up.
3. Serve the courgettes and plaice fillets with some parsley sprinkled over the top and wedges of lemon.
