Method

 
1. Blend all the ingredients together in a food processor to a coarse paste. Taste for seasoning.

2. Use this sauce soon after you've made it - it's much better fresh.

generous bunch flat-leaf parsley, leaves only
120ml extra virgin olive oil
2 tbsp red wine vinegar
1/2 tbsp lime, juice only
3 garlic cloves
1 tsp ground cumin
1 tsp smoked paprika
2 tbsp fresh oregano leaves
