1. Mix together the grated carrots, lime juice, zest, sweet chilli sauce, fish sauce, grated ginger and chopped mint.

2. Serve as an accompaniment to barbecued meats and fish.

700g Carrots, peeled and grated

4 tbsp Thai sweet chilli sauce
1 tsp nam pla (Thai fish sauce)
3 cm ginger root, peeled and grated
