Penne with mascarpone sauce

Method

 
1. Cook the pasta according to the instructions on the packet and drain, reserving the cooking water.

2. In a heated serving bowl, dilute the mascarpone with 2 tablespoons of the pasta water. Add the egg yolks, beating them in gently but thoroughly with a wooden spoon. Stir in the prosciutto and half the grated cheese.

3. Transfer the strained pasta to the bowl and toss thoroughly with the sauce. Scatter over the rest of the cheese and serve.
