Method

1. Pre-heat the oven to 180C/gas 4.

2. Quarter the peaches, removing the stones. Whip together the mascarpone and honey and reserve.

3. In an ovenproof pan, heat the butter and sugar until they form a light caramel. Add the peaches and cook gently until they just start to catch in the pan. Deglaze the pan with the amaretto. Transfer to the fruit to the oven for one or two more minutes to finish off.

4. Serve the peaches with the mascarpone and juices from the pan.

This is delicious - a great summer recipe. I used a bit more butter than the recipe called for - I also transferred the peaches to an oven proof dish to put in the oven and then left to cool. Just before serving I warmed the peaches and sauce through so they were warm - not hot - and served, as I felt in the heat of the summer they were more refreshing warm rather than hot and the mascarpone still melts.
