Angel hair with langoustines

Method

 
1. Put the angel hair pasta in a pan of boiling salted water.

2. Heat the butter in a wide saucepan and add the chopped garlic, chilli and langoustines. Cook for 1 minute, then stir in the tomatoes and basil.

3. When the pasta is almost cooked, add the courgettes to the boiling water and cook for one more minute or until pasta is ready.

4. Drain the angel hair pasta and toss together with the langoustines and courgettes. Season to taste and serve.

400g angel hair pasta
1 knob of butter
1 garlic clove, chopped
1 dried chilli, chopped
16 langoustines, cooked and peeled
1kg fresh plum tomatoes, skinned, deseeded and chopped
1 bunch Basil, ripped
3 courgettes, grated
