Method
1. Heat a little olive oil in frying pan and sear the scallops for approximately a minute on each side.2. For the dressing combine the balsamic vinegar and olive oil in a bowl and whisk.
3. When the scallops are seared, squeeze over the slice of lemon.
4. Serve the scallops with a few salad leaves and the dressing drizzled on top.
