Anchovy and balsamic dressing

Method

 
1. Heat a little olive oil in a small frying pan and cook the shallot until softened. Add the anchovies and cook for 1-2 minutes.

2. Remove from the heat and transfer to a bowl. Add the balsamic vinegar and chopped chives. Pour in the extra virgin olive oil and mix together well.

Olive oil, for frying
1 banana shallot, finely chopped
100g tinned anchovies, diced
50g aged Balsamic vinegar
handful chopped chives
150g extra virgin olive oil
