Matthew Fort wraps spears of purple sprouting broccoli with crisped Parma ham

Ingredients

  • 12 spears purple sprouting broccoli, trimmed
  • 6 slices Parma ham, or another cured ham
  • Olive oil
  • parmesan shavings

Method

1. Preheat the oven to 180C/gas 4.

2. Cook the broccoli in a pan of boiling salted water for 3 to 4 minutes, until tender. Drain and plunge straight into cold water. When cool, drain again and dry the spears with kitchen paper.

3. Lay 2 spears on one end of a slice of Parma ham and carefully roll the ham around them. Repeat with the remaining ingredients.

4. Put the rolls on a non-stick oven tray, drizzle with a little olive oil and bake about 5 minutes, until crisp.

5. To serve, splash a little olive oil onto the centre of each serving plate and sit the broccoli and ham rolls on top. Finish with parmesan shavings.
