Rye bread

Method

 
1. Put 250g rye flour in a bowl and add 15g yeast and 200ml water. Mix well for 6 minutes then cover and leave to rise for 9 hours or overnight.

2. Line a baking tray with baking paper.

3. Add the remaining ingredients to the dough and knead well for 5 minutes.

4. Shape the dough into a ball and place on the lined baking tray. Leave to rise for 2-3 hours.

5. Preheat the oven to 220C/gas 7.

6. Bake for 40 minutes until cooked through. Cool on a wire rack.

500g dark rye flour
40ml black treacle
30g Yeast
12g Salt
430ml water
