Method

 
1. Heat the oil in a non-stick saucepan. Add the mustard seeds, curry leaves and dal and cook until the lentils start to brown.

2. Add the onion, chilli, peas and salt and cook until the onion is translucent. Add the semolina and stir-fry over a high heat for a minute or two, or until you can smell its distinctive aroma.

3. Pour in 125ml of water and continue cooking and stirring until the mixtures comes together. Serve hot.

1 tbsp vegetable oil
1/2 tsp Mustard seeds
8 curry leaves
1/2 tsp channa dal
3 tbsp chopped onion
1/2 green chilli, finely sliced
handful frozen peas
Salt
50g coarse-grain Semolina
