Method
2. Heat the oil in a wok and fry the onions with the curry leaves for 4 minutes over a medium heat or until the onions looked glazed.
3. Stir in the minced garlic mixture with the turmeric and salt and fry for 2 minutes.
4. Add 100ml coconut milk with the boiling water. Simmer for 2 minutes and then add the fish pieces and gently simmer for 5-6 minutes.
5. Add half the tomatoes and the remaining coconut milk and simmer for 3-4 minutes more.
6. Serve hot with naan bread and plain basmati rice. Garnish with the remaining chopped tomato.

3 garlic cloves2 green finger Chillies
1 x 5 cm piece root ginger, peeled
3 tbsp groundnut oil
1 small onion, finely sliced
5-6 curry leaves, optional
1/4 tsp ground turmeric
1/4 tsp Salt
200ml coconut milk
150ml boiling water
500g haddock fillets, cut into 4cm wide pieces
2 Tomatoes, coarsely chopped
To serve
