Pan-fried bara brith with whiskey cream
Method
2. Put the sandwich in the beaten egg for at least 30 seconds, so that the bread absorbs the egg mixture. Repeat with the remaining sandwiches.
3. Gently heat the clarified butter in a frying pan and cook the sandwiches on both sides until golden. Drain on kitchen paper.
4. For the whiskey cream: whisk the double cream and whiskey liqueur together until stiff.
5. To serve: sprinkle the cooked sandwiches with caster sugar and cinnamon and serve with a spoonful of whisky cream.
