500g cherry tomatoes, cut in half
80ml extra virgin olive oil, plus 2 tbsp extra for brushing
60ml red wine vinegar
1 tsp caster sugar
4 thick slices wholemeal or sourdough bread
1 garlic clove, cut in half
500g rigatoni pasta
60g basil leaves, finely shredded
250g Ricotta cheese
