A creamy white chocolate icing tops Bill Granger's gorgeous little cupcakes.

1. For the cakes: preheat the oven to 180C/gas 4. Grease a 12-hole 125ml non-stick muffin tray.

2. Put the butter and sugar in a bowl and beat until pale and creamy. Add the eggs, one at a time, then add the vanilla and beat until well combined. Sift the flours together and fold in while adding the milk. Stir until almost smooth.

3. Divide the mixture between the muffin holes then bake for 20 minutes. Remove from the oven and leave to sit for 10 minutes in the tin. Turn the cakes out onto a wire rack to cool.

4. For the icing: while the cakes are cooling put the white chocolate in a bowl over gently simmering water.

5. Once the chocolate has melted stir until smooth and remove from the heat to cool slightly. Gently beat in the sour cream until you have a thick creamy icing.

6. Spread the cooled cakes with the icing and top with raspberries or sweets.


For the cakes:

  • 250 g unsalted butter, softened
  • 250 g caster sugar
  • 4 eggs
  • 1 tsp natural vanilla extract
  • 185 g self-raising flour
  • 60 g plain flour
  • 185 ml milk

For the icing:

  • 250 g white chocolate chips
  • 300 ml soured cream
  • raspberries or sweets, to decorate

Dreadful recipe - should've trusted my instincts and known that there was too much butter and eggs for that much flour. Horrible - destined for a trifle or stewed fruit and custard! Peeved off!

DISGUSTING!!!!!! sloppy greasy , yuck yuck. i did every think to the letter but was a waste of ingrediants. :O(

Amazing cupcakes! The texture was light,fluffy and not greasy at all. They rose just right and made 12 big cupcakes but everyone still wanted more! No idea why people are saying they are eggy, they were perfection:D I substituted the soured cream frosting for white chocolate buttercream frosting. I will use this recipe again and again...YUM!!

you only need three eyes well whisked-i use veg oil, and less milk and seemed ok to me-ising curdled a bit though :s

Awful recipe, 4 eggs is way too many, the texture looked soggy and greasy and looked like curdle, the cupcakes were very dense and tasted of eggs. i threw all the cupcakes in the bin, waste of time and money! Very annoyed! It also states it makes 12 cakes, i ended up having enough to make 18.

Yummy! The raw mix is irrestistable too (beware raw eggs) easy and straightforward and turned out great for me, unsure why others here didn't turn out well, but mine tasted scrummy even if I do say so myself. Recipe worked great for me ***** stars

These were great! I got 16 instead of 12 though. The "eggy" smell others are talking about went away after they cooled down. I'll be making them again soon!

cupcakes came out great !!! people have been saying mixture was sloppy...i only used 2 tablespoons of milk..purely by accident. took recipe down mistake i will keep making.. im not a fan of the icing..i think that is just personel taste though.

i love this cake. i made it as a cake not cup cakes. i dunno what the other people are saying about this cake beening bad! the only bad thing about this cake was that i had to share it with my family!! i will definatly bake it again!!

I rate this recipe as one of the bests. Admittedly it was very sloppy and I really didn’t think it was going to turn out any good; but the end result was absolutely fantastic.
I made one hundred of them for my daughters 30th and I have orders to make more; so if that isn’t success I don’t know what is.
I will never use any other recipe again.

Did not like at all. Was too watery and did not rise nice and fluffy, tasted too eggy, do not need 4 eggs!!! will not use again and stick to family cup cake recipe i think!

Talk about stodge-a-rama! These are so heavy and didn't even rise! They're horrible! I won't be making these again. Whoever made this recipe up needs to re think it. Just horrid.

These are really the worst cupcakes I have ever made. I should have read the reviews below before making them. So heavy they didn't even rise, the stuck to the cupcakes wrappers and most definitely did not need four eggs.

Terrible recipe, far too many eggs, which resulted in soggy, eggy-tasting cupcakes which had to be thrown in the bin, waste of time and money! Very disappointed!

Awful recipe, thought 4 eggs was too many. Extremely greasy and heavy. Probably the worst cup cake recipe I have ever tried.

So disappointed! Looked so easy but came out heavy, stodgy and really greasy. I followed the recipe EXACTLY so don't know what went wrong. Icing was also way too runny to make them look like the photo.

Makes a good batch of muffins I ended up with 16 in total. Very good and have a lovely moist texture. I added melted white chocolate for flavour which is very nice. I definitely recommend this recipe as its so easy to do and easily varied to suit different tastes.

I think this site is brill, but it says on the suggestion page that they were easy recipes and all of them are quite hard!
