Martin Blunos's scrumptious chocolate and marmalade brownies are served with dollops of cream whipped up with orange zest

Ingredients

  • 85g unsalted Butter
  • 110g caster sugar
  • 1 tbsp marmalade
  • 1/2 tsp vanilla extract
  • 25g drinking chocolate
  • 2 Eggs, beaten
  • 50g dark chocolate, (70% cocoa), melted
  • 110g Walnuts, chopped (optional)
  • 75g plain flour
  • 1/2 tsp Baking powder
  • 1 Orange, zest only
  • double cream, to serve

Method

1. Preheat the oven to 190C/gas 5.

2. Grease a 20cm square baking tin and line it with baking parchment.

3. Cream the butter, marmalade, and 100g of the sugar together until light and fluffy. Now slowly beat in the vanilla, drinking chocolate and eggs, followed by the melted chocolate, and walnuts (if using). Mix well, then fold in the flour and baking powder.

4. Spread the mixture into the tin and bake for 30-35 minutes, until the brownie is cooked. Leave to cool before cutting into squares and dusting with icing sugar.

5. Combine the orange zest and remaining caster sugar with the double cream and serve a good sized dollop with each brownie.
