Maria Elia's delicious quick and easy pasta dish combines tasty sardines with aniseed flavoured fennel seeds and tomato sauce

 

Sardine, tomato and fennel seed spaghetti

Method

 
1. Pour 2 tbsp olive oil from the sardines into a pan over a medium heat. Add the garlic, fennel and chilli flakes and cook gently for about 30 seconds until aromatic. Be careful not to burn the contents of the pan.

2. Add the tomato sauce - ideally Maria Elia's Basic Tomato Sauce. Flake the sardines and add to the pan. Simmer for 5 minutes.

3. Cook the spaghetti in boiling salted water according to the directions on the pack. Drain and stir in the sardine mixture.

4. To serve: place on a serving plate and top with a handful of rocket and parmesan shavings.

Ingredients

1 x 120g tin sardines in Olive oil, drained and oil reserved
1 garlic clove, chopped
2 tsp Fennel seeds
pinch chilli flakes
1/2 litre Tomato Sauce
200g spaghetti

To serve

Rocket
Parmesan, shaved
