Green bean, watercress and pistachio salad

Method

 
1. Place the blanched beans, watercress and pistachio nuts in a bowl.

2. Whisk together the olive oil and lime juice, season with salt and pepper and toss with the salad.

3. Serve immediately.

250g green beans, topped, blanched and refreshed
1 packet picked watercress leaves, washed
55g pistachio nuts, coarsely chopped
2 tbsp extra virgin olive oil
