75g Butter, diced
50g Parmesan, grated
1 egg beaten
For the filling
1 knob of Butter350g leeks, shredded
100g Stilton cheese, coarsley grated
1 tbsp chopped parsley
2 Eggs
300ml single cream
pinch of freshly grated nutmeg
salt and freshly ground black pepper
12 black pitted olives, optional
