Gino D'Acampo from Gino D'Acampo Returns to Mexico
Gino D'Acampo's light avocado starter is filled with savoury rice stuffing and complemented with a piquant lemon dressing

 

Aguacate relleno (stuffed avocado)

Method

 
1. In a small bowl, combine the 2 teaspoons of the lemon juice with the salt and pepper. Slowly whisk in the olive oil and set aside.

2. In another bowl, combine the rice, tomato, spring onions, garlic and coriander. Add lemon juice dressing and mix evenly.

3. Slice avocados lengthwise into four halves; remove pits. Sprinkle the remaining lemon juice over avocados.

4. Spoon rice mixture into each avocado half and serve.

1/2 lemon, juice only
1/2 tsp Salt
1 tsp freshly ground black pepper
2 tbsp Olive oil
55g cooked rice
1 ripe tomato, seeded and diced
4 Spring onions, sliced
1 garlic clove, chopped
1 tbsp chopped fresh Coriander
2 ripe avocados
