Paul Hollywood's simple soda bread makes a nourishing treat for tea and is the perfect thing to serve alongside warming bowls of soup
 

Soda bread with cheddar and chives

Method

 
1. Preheat the oven to 230C/gas 8. Line a baking tray with baking parchment and set aside.

2. Combine the flour, salt, sugar, bicarbonate of soda and cream of tartar in a mixing bowl. Make a well in the centre, pour in the buttermilk and, using one hand, gradually bring the dry ingredients into the wet to make a dough.

3. Lightly flour a work surface. Tip the dough out onto it and knead slowly for 5 minutes.

4. Work the cheese and chives into the dough, then shape it into a ball.

5. Place the ball of dough on the lined baking tray and bake for 15 minutes. Then reduce the oven temperature to 200C/gas 6 and continue baking for another 30 minutes.

6. Remove the soda bread from the oven and set aside to cool on a wire rack.

Ingredients

450g white bread flour, plus extra for dusting
1 tsp fine sea salt
1 tsp caster sugar
1 tsp Bicarbonate of soda
1 tsp cream of tartar
350ml Buttermilk
100g strong mature Cheddar cheese, diced
small bunch fresh chives, chopped
