Domino marshmallow

Method

 
1. Soak the gelatine in cold water for about ten minutes until softened.

2. In a saucepan bring 500g icing sugar, glucose and water to the boil and simmer for 4 minutes. Remove from the heat and stir in the soaked gelatine.

3. Whisk the egg whites in an electric mixer, adding the hot syrup as you do so. Continue to whisk on high speed for ten minutes, then add the rose water.

4. Line a tray with cling film and dust with cornflour and the remaining icing sugar. Add the cooled marshmallow, and then dust again with more corn flour and sugar.

5. Leave to cool completely, slice into rectangles, dust again with corn flour and sugar and decorate with chocolate to resemble dominos.

35g leaf gelatine
8 tbsp water
600g icing sugar
50g glucose
170ml water
2 egg whites
a few drops rose water
100g cornflour
50g chocolate, melted, to decorate
