Rib-eye steak with green beans and mushroom dressing

Method

 
1. Season the steak with salt and pepper. Heat a frying pan to medium hot and drizzle with a little of the olive oil.

2. Place the rib-eye steak into the frying pan, brown quickly on both sides and cook for 3-4 minutes. When ready, leave to rest.

3. Cook the green beans in boiling salted water until tender then drain and keep warm.

4. Heat the remaining oil and butter in a frying pan.

5. Cook the mushrooms and shallots until soft.

6. Add the red wine vinegar and cook steadily until reduced by half.

7. Pour in the veal stock, remove from the heat, season with salt and pepper and add the chives.

8. To serve: place the green beans in the middle of the plate and put the rib-eye steak on top. Drizzle the mushroom dressing on top and around the plate.

Ingredients

1 x 180g rib-eye steak, (at least 1cm thick)
2 tbsp Olive oil
80g mixed wild mushrooms
1 shallot, finely chopped
25g Butter
20ml red wine vinegar
40ml strong veal stock
1 bunch Chives, snipped
green beans, to serve
