Avocado, orange and watercress salad

Method

 
1. Mix the olive oil and lime juice in a bowl and season with sea salt and freshly ground black pepper.

2. Add the chopped orange and avocado.

3. Gently toss in the watercress sprigs and serve.

Ingredients

50ml Olive oil
1/2 lime, juice only
1 orange, peeled to remove all membrane, then segmented and chopped
2 avocados, halved, peeled, stone removed and chopped roughly into 2cm cubes
125g watercress sprigs
