Eadie Manson marinates fillets of haddock in ginger, orange and honey for this delicious and easy supper served with a warm salad of new potatoes and bacon
 

Ginger and citrus haddock with warm potato salad

Method

 
1. Combine all the marinade ingredients and pour over the haddock fillets. Allow to marinate for anywhere between 5 and 20 minutes.

2. Remove the fish from the marinade and cook under a hot grill for 2 minutes on each side.

3. For the salad, slice the new potatoes and boil until just tender and leave to cool. Fry the lardons in a dry pan until crispy, then add the diced onion and finally toss in the sliced new potatoes.

4. Arrange the warm salad on a plate and place a haddock fillet on top. Serve with fresh salad leaves.

Ingredients

4 haddock fillets

For the marinade

1 tbsp Sesame oil
2 tbsp Soy sauce
2 oranges, zest and juice
2.5 cm ginger root, grated
1 garlic clove
20ml heather honey

For the salad

100g new potatoes
50g streaky bacon, cut into narrow strips (lardons)
1/2 onion, diced
fresh salad leaves, to serve
