Try this steak tartare from The Witchery restaurant. It's quick, easy and simply delicious - who's afraid of a little raw meat?
 

The Witchery's steak tartare

Method

 
1. Place a stainless steel bowl in the fridge for 30 minutes.

2. Meanwhile, chop the beef very finely and place in the chilled bowl

3. Add the shallots and capers and mix well.

4. Season to taste with salt, freshly ground black pepper, Tabasco and Worcestershire sauce. Divide into 4 and shape into steaks.

5. Fry the quail's eggs.

6. Place a steak on each of 4 dinner plates and top each with a quails` egg. Garnish with parsley and serve with chips.

Ingredients

450g prime scotch Beef fillet
1 shallot, finely diced
1 tbsp capers, roughly chopped
sea salt and freshly ground black pepper
Tabasco sauce to taste
Worcestershire sauce, to taste

To serve

4 quail's eggs
small handful flat-leaf parsley, finely chopped
chips
