Ingredients
- 4 herring fillets
- 4 tbsp Flour
- 2 Eggs, beaten
- 50ml Milk
- 200g pinhead oatmeal
- 50g fine oatmeal
- 25g unsalted Butter
- 150ml vegetable oil
To serve
- sprigs Parsley
- lemon wedges
Method
1. Dip the herring into the flour and coat both sides.2. Beat the eggs with the milk
3. Mix together both types of oatmeal on a large flat plate
4. Dip the herring into the egg and milk mixture, then dip into the oatmeal mixture to coat.
5. Heat the butter and oil in a frying pan until the butter starts to brown.
6. Put the herring into the pan skin side first.
7. Cook for a couple of minutes on each side.
8. Serve flesh side up garnished with parsley and lemon.
