Ingredients
- 1 tbsp Olive oil, plus a little extra for drizzling
- 1 Onion, chopped
- 1 clove Garlic, chopped
- 1 tsp ground Cumin
- 1 thumb fresh Ginger, chopped
- 2 tsp Chillies, chopped
- 400g minced Chicken breast
- 1 tsp chopped Coriander
- 1 Egg
- 50g breadcrumbs
- salt and black pepper
- 1 handful Flour
- 100g Goats cheese
- 1 splash Olive oil
To serve
- 4 sesame bagel, toasted
- 2 tbsp mango chutney
- a few Rocket
- 1 lime juice
Method
1. Heat the olive oil and sweat the onion, garlic, cumin, ginger and chillies together until softened.2. Stir into the minced chicken and add the chopped coriander, egg, breadcrumbs and salt and pepper.
3. Flour a chopping board and shape the mixture into four balls. Insert a slice of goat's cheese in the centre of each and shape into a burger. Refrigerate until needed.
4. Drizzle the burgers with a touch of olive oil and barbecue until cooked through.
5. Serve on toasted bagels covered with mango chutney. Top with rocket leaves and a squeeze of lime.
