Merrilees Parker from Food Uncut

Vanilla peaches

Method

 
1. Preheat oven to 200C/gas 6.

2. Split the vanilla pods and scrape out the seeds, then cut the pods into about eight thin strips and mix with the sugar. Crush the Amaretti biscuits into rough crumbs.

3. Cut the peaches in half and remove the stones, then place cut side down on a very hot griddle pan to char the surface.

4. Place the peaches marked side up on a tray and sprinkle with the vanilla sugar. Dot each peach with a little butter, splash with the brandy and then sprinkle with the Amaretti crumbs. Bake for about ten minutes in the oven until the tops are crusty and the peaches are soft but still retain their shape.

5. Remove from the oven and leave to cool slightly. Drizzle with the remaining pan juices, then serve with a dollop of Greek yoghurt, some finely sliced mint and a sprig to garnish.

1 vanilla pod
50g caster sugar
40g amaretti biscuits
4 ripe Peaches
40g unsalted Butter
3 tbsp Brandy
200g Greek yogurt
4 sprigs Mint, plus a few extra leaves
