1. Place all the ingredients in a jam jar and give it a good shake.

Ingredients

2 large Lemons, zest only
2 limes, zest only
25g red chilli flakes, at least 3 parts red skin to 1 part or less seeds
1 tbsp Szechuan peppercorns
1 tbsp fresh Ginger, finely minced
55g green and white Spring onions
1 large garlic clove, finely chopped
400ml corn oil, peanut or canola oil
2 tbsp Japanese Sesame oil
