Pea shoot, cucumber, melon and mint salad

Method

 
1. Peel the cucumber, cut in half lengthwise, remove the seeds and cut into chunky slices. Place in a bowl, season with the salt and sugar, and set aside for 10 minutes.

2. Blanch the pea shoots for 1 minute in slightly salted boiling water, drain and add to the cucumber.

3. Add the melon, mint and oil, and toss well together.

4. Season and serve with Gino D'Acampo's marinated salmon.

Ingredients

1 Cucumber, medium
sea salt, pinch
caster sugar, pinch
250g pea shoots
1/2 melon, Galia, scooped into balls
handful fresh mint leaves, roughly chopped
1 tbsp extra virgin olive oil
sea salt and freshly ground black pepper, to season
