Sesame chicken salad with original caesar cardini dressing

Method

 
1. Whisk the mustard and maple syrup together in a bowl, add the chicken and leave to marinate in the fridge for 1 hour.

2. Pour the sesame seeds in a shallow dish. Remove the chicken from the marinade and shake off any excess liquid. Roll the chicken pieces in the sesame seeds until they are evenly coated.

3. Heat the oil in a large non-stick pan, add the chicken pieces a few at a time and cook for 2-3 minutes on each side.

4. To make the dressing, mix the garlic, olive oil, lemon juice and Worcestershire sauce thoroughly in a bowl.

5. Put the lettuce leaves in a large salad bowl and break the eggs over them. Toss the salad gently and add the rest of the mixed ingredients, tossing again.

6. Finally, add the chicken and Parmesan cheese and serve.

Ingredients


For the salad

2 tbsp Dijon mustard
3 tbsp maple syrup
2 skinless, boneless chicken breasts, sliced
40g mixed Sesame seeds, (black and white)
2-4 tbsp Olive oil
4 heads baby cos lettuce, leaves only, washed and dried

For the dressing

3 garlic cloves, crushed
150ml Olive oil
2 Eggs, boiled for 1 minute
2 Lemons, juice only
1 tsp Worcestershire sauce
30g Parmesan, grated
