Caledonian cream

Carol Wilson's indulgent Scottish dessert combines tangy orange marmalade, cream and malt whisky - ideal for a special occasion treat
Ingredients
- 3 tbsp bitter, chunkyorange marmalade
- 2-3 tbsp malt whisky
- 2 tsp lemon juice
- 2 tbsp orange juice
- 1 Orange, finely grated zest
- 300ml double cream
- 1/2 tbsp golden icing sugar
- candied orange peel, to decorate
Method
1. Whisk all the ingredients except the candied peel with an electric whisk until thick and smooth.2. Spoon into serving dishes and decorate with slivers of candied peel.
3. Chill for at least 1 hour before serving.
