Nectarine amaretto trifle

Method

 
1. Pour the coffee and 150ml of the Amaretto into a shallow dish. Dip each sponge finger into the coffee mixture and use to line the base of a 1.2 litre shallow serving dish.

2. Arrange the nectarine slices over the soaked fingers.

3. Beat the mascarpone and sugar together in a large bowl.

4. Gently beat in the cream and the remaining Amaretto.

5. Spoon the mascarpone mixture evenly over the nectarines. Cover and chill for 2 hours. Dust generously with cocoa powder just before serving.

300ml strong black coffee
200ml Amaretto
115g sponge fingers
4 ripe Nectarines, thinly sliced
250g Mascarpone
25g caster sugar
300ml double cream
Cocoa powder, for dusting
