Tarragon vinaigrette

Method

 
1. Cut the garlic cloves in half and set aside.

2. Combine the lemon juice, vinegar and sugar in a bowl.

3. Gradually whisk in the olive oil and season with salt and pepper.

4. Using a small funnel, pour into a jar or bottle. Add the garlic cloves and sprigs of tarragon. Seal with a lid or cork. Shake well before using.

2 garlic cloves, peeled
1/2 lemon, juice only
120ml white wine vinegar
pinch caster sugar
500ml Olive oil
3 sprigs fresh tarragon
freshly ground salt and pepper
