Method

 
1. Place the asparagus tips and lemon juice in a food processor and pulse to a rough paste.

2. With the motor running add the oil, then tip into a bowl.

3. Check the seasoning and fold in the lemon zest and pecorino.

4. Toss the pesto into the warm drained pasta in a pan over a low heat. Warm through gently. Serve with more grated pecorino sprinkled over the top and a twist of black pepper.

Ingredients

8 asparagus tips
1 unwaxed lemon, juice and zest
150ml extra virgin olive oil
4 tbsp freshly grated Pecorino cheese
sea salt and freshly ground black pepper

To serve

4 servings penne, cooked
freshly grated Pecorino cheese
