Asparagus pesto (with penne)

Merrilees Parker blitzes up a quick and tasty asparagus pesto that's perfect with a bowl of penne pasta
Ingredients
- 8 tips of Asparagus
- 1 unwaxed Lemon, juice and zest
- 150ml extra virgin Olive oil
- 4 tbsp freshly grated Pecorino cheese
- sea salt and freshly ground black pepper
To serve
- 4 servings penne, cooked
- freshly grated Pecorino cheese
Method
1. Place the asparagus tips and lemon juice in a food processor and pulse to a rough paste.2. With the motor running add the oil, then tip into a bowl.
3. Check the seasoning and fold in the lemon zest and pecorino.
4. Toss the pesto into the warm drained pasta in a pan over a low heat. Warm through gently. Serve with more grated pecorino sprinkled over the top and a twist of black pepper.
